Tourism and Hospitality Studies
2 hours a week for 30 weeks
This module gives learners a general understanding of the development and current status of the Tourism and Hospitality industry. This will be achieved through a variety of lectures, group seminars, guest speakers and visits (including London and an overseas trip)
Assessment takes the form of a poster presentation, an essay and a group presentation. As with many of the modules students are encouraged to demonstrate their learning in a practical way with limited essays and reports.
Food and Beverage Operations
2 hours a week for 15 weeks
This module provides the opportunity to gain an understanding of the theory behind the food and beverage operation and apply it within a series of practical experiences.
Delivery is through a variety of lectures, practical and group seminars.
Events and Conference Management
4 hours a week for 15 weeks
Within this module learners consider all of the functions that are required in event planning, conferences and exhibitions.
Delivery involves a variety of lectures, practicals, workshops and a weekend event.
Assessment takes the form of running a 2 day event/conference which the students plan as a group and then take full responsibility for managing and running the event from start to finish. In 2007 the students organised the Senior Manager’s Conference for the Richardson Hotel Group, where a total of 100 delegates attended a 2 day event with a Gala Dinner Reception at the end of the second day.
Assessment takes the form of running a themed restaurant event and analysing an F&B operation. Examples of themes held include: Moulin Rouge, Orient Express, Mediaeval – all are held in Horizons (the college fine dining restaurant). Customers and students thoroughly enjoy the experience which enables a broad range of skills development and teamwork.
